Cobblemon is the Pokémon mod that finally looks like Pokémon: proper models, animations and a lighter install than Pixelmon. Cobblemon.gg is the server that has made the most of it. When we ping it, it has more players than any other dedicated Cobblemon server on our list, and its own pitch for why is a single line: "Think Pixelmon, but modern."

Clans compete for Valor points; battles run in singles, doubles or triples. Land claims and permissions protect your base between fights.
Breeding has IVs and egg moves, the Pokédex covers "over 900 Pokémon across all generations," and the whole thing is "completely free to join and play." The store sells cosmetics; the gameplay is the same for everyone.
Joining takes one install
Cobblemon is a mod, so you need the server's modpack: it's on Modrinth and CurseForge, and either launcher installs it with a click.
